Eating well in a living situation that runs light on kitchen equipment can be a challenge, but it’s certainly not impossible. Microwave cooking has come a long way since the days of half-done or overcooked portions.

The best microwave oven will allow you to prepare healthy and balanced meals, as well as special treats. It will have both capacity and control, permitting the custom settings to accomplish any culinary task.

The Recipe: Baked Potato

The Ingredients

  • 1 large russet potato
  • 3 tbsp shredded cheese of your choice
  • 1 tbsp butter
  • 3 tsp sour cream
  • salt and pepper to taste
  • toppings of your choice

The Preparation Steps

Scrub your potato, then prick it several times with a fork to provide vents for escaping steam. Place on a microwave safe plate. Cook it at full power for five minutes, the turn it over and continue cooking for five more minutes. When your potato is soft, remove it from the microwave. Be careful, it will be extremely hot!

Slit the potato lengthwise, opening the two halves. Seasoning with salt and pepper, apply the butter, mashing the cooked potato slightly with a fork. Top with most of the cheese and return it to the microwave, cooking for approximately one minute to melt the cheese.

At this point, you should top your delicious potato with the remaining cheese, sour cream, chives, and anything else you decide needs to be added.

The Recipe: Pork Loin

The Ingredients

  • 1 two-pound boneless pork loin
  • 3 onions, halved
  • ½ cup water
  • 2 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 tsp dried thyme

The Preparation Steps

First, pat the pork dry with a paper towel and perforate it at 1-inch intervals with a knife. Insert your rosemary into these perforations. Then, place the onions into a glass pie plate ( 9 or 10 inches in diameter). Set the roast on top of the onions; they will act like a roasting rack. Pour the water over the meat and then sprinkle it with the salt, pepper, cumin, and thyme.

Cook your roast in the microwave at full power for 16 minutes (about 8 minutes per pound.) Then, turning the roast over, cook it for an additional six minutes. The internal temperature should be no less than 145 degrees Fahrenheit.

Remove the roast from the microwave oven and cover it loosely with aluminum foil. Allowing it to rest for about 15 minutes before you carve it will permit the meat to soak up lost moisture.

The Recipe: Chocolate Cake in a Mug

The Ingredients

  • 4 tbsp all-purpose flour
  • 4 tbsp sugar
  • 2 tbsp cocoa
  • 3 tbsp milk
  • 3 tbsp oil
  • 1 egg
  • 3 tbsp chocolate chips (add more or less to taste)
  • 1/8 tsp vanilla extract

The Preparation Steps

Mix all dry ingredients well in the mug. Then, add the egg and mix thoroughly. Next, mix in the milk, blending well. Last, add the chocolate chips and vanilla, mixing your batter thoroughly.

Place your mug in the microwave and cook for three minutes at full strength. Do not be alarmed when the cake rises above the mug rim. It’s supposed to do that. Allow it to cool fully before enjoying.
